Perfect for a summer BBQ as a side dish, this roasted butternut squash recipe is a lovely accompaniment to meat or fish. You can use any time of squash too from a buttercup squash to an acorn squash. The simple and effortless dish can be cooked before your guests arrive and quickly finished before you sit down to eat giving you more time to spend with friends.
Ingredients
Roasted butternut squash on the big green egg
- 1 tbl sp olive oil
- 1 butternut squash
- 1 packet of feta cheese
- 1 bag of rocket salad leaves
- A drizzle of honey (preferably runny honey)
Method:
- Preheat the oven to 180°C or get your Big Green Egg to a similar temperature
- Lightly rub the butternut squash in olive oil
- Place it in the oven/Big Green Egg for 1 hour, turning occasionally
- Once the time is up, leave to cool. Cut in half and drizzle with honey, top with feta and rocket leaves and season with salt and pepper
